Chicken Bacon Ranch Stuffed Sweet Potato
Ingredients
- 1 sweet potato
- 1/2 cup chopped cooked chicken
- 1/2 cup shredded mozzarella or cheese of choice
- 2-3 tablespoons ranch dressing
- 1/2 jalapeño, chopped (optional)
- 2 pieces bacon, cooked and chopped
- Oil (for baking)
Spices
- garlic powder
- paprika
- oregano
- pinch of black pepper
- salt
Preparation
Bake the sweet potato with oil and a sprinkle of salt for 1 hour at 400 degrees Fahrenheit.
Allow the potato to cool slightly, then cut it in half.
In a bowl, combine the chicken, spices, cheese, ranch dressing, bacon, and jalapeño; mix well.
Stuff the mixture evenly into the potato halves.
Top with extra cheese, bacon, and jalapeños.
Return to the oven and bake at 425 degrees Fahrenheit for 10-15 minutes or until the cheese is melted.
Tips
Top with more ranch dressing and scallions for additional flavor.
