Spiced Battered Potato Fries
Ingredients
- 4 medium potatoes, unpeeled
- 1 cup flour
- 1 teaspoon salt
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1 teaspoon oregano
- 1 teaspoon basil
- 1 teaspoon dried parsley
- 1/2 teaspoon black pepper
- 1/4 teaspoon turmeric
Egg mixture
- 1/4 cup milk
- 1 large egg
- 1/8 teaspoon baking powder
For frying
- corn oil
Preparation
Wash the potatoes well to remove any adhering dirt.
Cut the potatoes into thin fingers using a sharp knife.
In a deep bowl, place the flour, salt, onion powder, garlic powder, ground coriander, paprika, oregano, basil, dried parsley, black pepper, and turmeric. Mix the ingredients with a fork to combine.
For the egg mixture, in a deep bowl, place the milk, egg, and baking powder.
In a deep frying pan, add corn oil to a height of about 2 inches.
Place the pan on medium heat to heat the oil well.
Dip several potato fingers in the egg mixture, coat well with a fork, then transfer to the flour mixture and coat completely. Place directly in the oil. Repeat with the remaining potato fingers without overcrowding the pan.
Use a slotted spoon to turn the potato fingers until fully cooked and golden brown.
Transfer the potato fingers to kitchen paper to drain excess oil, then serve.
