Spicy Crispy Fried Chicken
Ingredients
- 1 kg chicken, cut
- 2 cups buttermilk
- 1 tsp oregano
- 1 tsp basil
- 1 tsp finely ground sage
- 1 cup flour
- 1/2 cup starch
- 1 tbsp paprika
- 1 tsp fine chili
- 1 tsp crushed chili
- 1 tsp ginger powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp MSG
- 1/4 tsp citric acid
- 1 tsp salt
- 1/4 tsp white pepper
- 1/4 tsp black pepper
- 1 tsp baking powder
- 2 large eggs
- 3/4 cup milk
Preparation
In a deep glass dish, place the buttermilk, oregano, basil, and sage and mix with a fork to combine the spices with the buttermilk, then add the chicken and mix to coat it completely, cover with plastic wrap, and refrigerate for 2 hours or overnight
In a deep dish, place the flour, starch, paprika, fine chili, crushed chili, ginger powder, garlic powder, onion powder, MSG, citric acid, salt, white pepper, black pepper, and baking powder and mix with a fork to combine
In a deep dish, place the milk and eggs and whisk by hand to mix them together
In a deep frying pan, add oil to a height of about 2 inches and heat over medium heat
Take a piece of chicken, coat it completely in the flour mixture, then dip it in the egg mixture to coat well, return it to the flour mixture and coat thoroughly again, and place it directly in the hot oil, repeating with the remaining chicken pieces
Reduce the heat to low, cover the pan with a perforated silicone lid or mesh cover, and cook for 10 minutes until the chicken is fully cooked and crispy, turning with tongs several times during frying
Transfer the chicken pieces to paper towels to drain excess oil
Serve the spicy crispy chicken with garlic sauce or ketchup
