Spiced Chicken Macaroni Kabsa

Ingredients

  • 1 teaspoon mixed spices
  • 1 teaspoon paprika
  • 1 teaspoon crushed chili
  • 1 teaspoon turmeric
  • 2 teaspoons salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons corn oil
  • 1 large chopped onion
  • 3 cloves crushed garlic
  • 1 tablespoon chopped ginger
  • 500 grams chopped chicken
  • 1 bell pepper
  • 2 bay leaves
  • 2 cinnamon sticks
  • 10 cardamom pods
  • 2 dried limes
  • 3 tablespoons tomato paste
  • 300 grams macaroni

For serving

  • chopped parsley
  • lemon

Preparation

  1. In a bowl, mix the spices, paprika, crushed chili, turmeric, salt, and black pepper, stir to combine, and set aside.

  2. In a pot, heat the corn oil, add the onion, garlic, and ginger, and stir until wilted.

  3. Add the chicken and stir it a little with the onion.

  4. Add the bell pepper, bay leaves, cinnamon sticks, cardamom pods, dried limes, and tomato paste.

  5. Add half the amount of the mixed spices.

  6. Add 6 cups of water and cook the chicken on medium heat for about 30 minutes until done.

  7. Add the macaroni and cook for a few minutes until done; add more water if desired for the desired consistency.

  8. Place the kabsa in a serving dish and sprinkle chopped parsley on top.

  9. Serve with lemon halves.
