Spiced Chicken Macaroni Kabsa
Ingredients
- 1 teaspoon mixed spices
- 1 teaspoon paprika
- 1 teaspoon crushed chili
- 1 teaspoon turmeric
- 2 teaspoons salt
- 1/4 teaspoon black pepper
- 2 tablespoons corn oil
- 1 large chopped onion
- 3 cloves crushed garlic
- 1 tablespoon chopped ginger
- 500 grams chopped chicken
- 1 bell pepper
- 2 bay leaves
- 2 cinnamon sticks
- 10 cardamom pods
- 2 dried limes
- 3 tablespoons tomato paste
- 300 grams macaroni
For serving

Preparation
In a bowl, mix the spices, paprika, crushed chili, turmeric, salt, and black pepper, stir to combine, and set aside.
In a pot, heat the corn oil, add the onion, garlic, and ginger, and stir until wilted.
Add the chicken and stir it a little with the onion.
Add the bell pepper, bay leaves, cinnamon sticks, cardamom pods, dried limes, and tomato paste.
Add half the amount of the mixed spices.
Add 6 cups of water and cook the chicken on medium heat for about 30 minutes until done.
Add the macaroni and cook for a few minutes until done; add more water if desired for the desired consistency.
Place the kabsa in a serving dish and sprinkle chopped parsley on top.
Serve with lemon halves.
