Northern Style Vermicelli Soup

Ingredients

  • Meat and bones, cleaned
  • Adabi soup powder
  • Water
  • Soup vegetable roots
  • Spring onion roots
  • Salt
  • Seasoning

Blended ingredients for soup

  • 2 large onions
  • 8 garlic cloves
  • 2 lemongrass stalks
  • Ginger
  • Galangal
  • Black pepper

Soy sauce sambal

  • 1 large onion
  • 8 garlic cloves
  • 10 bird's eye chilies
  • 2 large chilies
  • Soy sauce
  • Soup broth
  • Sugar

Red chili sauce

  • Chili powder
  • Soup broth
  • Sugar

Vermicelli

  • Rice vermicelli
  • Turmeric powder

Preparation

Soup

  1. Blend the blended ingredients for soup until smooth.

  2. Fry the blended mixture until golden.

  3. Add water and Adabi soup powder.

  4. Add the meat and bones and boil until tender.

  5. Add soup vegetable roots and spring onion roots.

  6. When they are soft, add salt and seasoning.

Soy sauce sambal

  1. Blend one large onion, eight garlic cloves, ten bird's eye chilies, and two large chilies.

  2. Fry the blended mixture.

  3. Add soy sauce, some soup broth, and sugar.

  4. Cook until thickened and almost dry.

Red chili sauce

  1. Mix chili powder with some soup broth and sugar.

  2. Cook until thickened.

Vermicelli

  1. Boil water and add a bit of turmeric powder and rice vermicelli.

  2. Cook until soft, then drain and rinse.

Assembly and serving

  1. Place the prepared vermicelli in bowls.

  2. Add the soup with meat and vegetables.

  3. Top with soy sauce sambal and red chili sauce.

  4. Serve immediately.
