Malaysian Clam Rendang
Ingredients
- Boiled clam meat
- 2 red onions
- 3 garlic cloves
- 4 lemongrass stalks
- Turmeric (to blend)
- Galangal (to blend)
- Ginger (to blend)
- Dried chilies (to blend)
- Sliced turmeric leaves
- Sliced kaffir lime leaves
- 2 tablespoons toasted coconut
- Palm sugar (adjust amount, not too much)
- Seasoning or MSG (adjust to taste)
- Salt (to taste)
- Tamarind juice (a little)
- Coconut milk
Preparation
Blend the starred ingredients until smooth
Add the blended paste to a pan and cook until dry
Add palm sugar, toasted coconut, seasoning, salt, and tamarind juice
Continue cooking until oil separates
Pour in coconut milk and cook until the rendang paste is fully done
Add boiled clam meat, kaffir lime leaves, and turmeric leaves
Cook until everything is heated through and ready to serve
