Spicy and Sour Fish Stew
Ingredients
- Handful of dried chilies
- 3 to 4 large onions
- 4 cloves garlic
- 2-inch piece ginger
- 1-inch piece fresh turmeric
- 1-inch piece galangal
Additional
- 1 teaspoon fenugreek
- 3 stalks lemongrass
- 3 to 4 kaffir lime leaves
- Fish (amount to preference)
- Tamarind juice (adjustable for thickness)
- Handful of laksa leaves
- 1 torch ginger flower, halved
Preparation
Blend all the ingredients from the Ingredients section.
In a pan, sauté 1 teaspoon of fenugreek first.
Add the blended mixture along with 3 stalks of lemongrass and 3 to 4 kaffir lime leaves.
Sauté until the oil separates.
Add the fish and stir briefly.
Pour in tamarind juice and adjust the consistency to be thick or thin as desired.
Add a handful of laksa leaves and half a torch ginger flower.
Season to taste and serve.
Tips
For a thicker stew, make the volume of blended ingredients equal to the fish and use less tamarind juice.
