Grilled Chicken with Soy Sauce
Ingredients
- 1 whole chicken, cut into 4 pieces
- 2 tablespoons sweet soy sauce
- 2 tablespoons palm sugar, grated
- 3 bay leaves
- 3 lemongrass stalks
- 1 liter coconut water
- 2 teaspoons salt
- 1 teaspoon shrimp powder (optional)
- 1 teaspoon stock powder
Ground spices
- 10 shallots
- 6 garlic cloves
- 5 candlenuts
- 1 piece turmeric
- 1 piece ginger
Preparation
Mix the ground spices and coconut water evenly in one pot.
Add the chicken, bay leaves, and lemongrass, then bring to a boil and add the sweet soy sauce and palm sugar.
Season with salt, stock powder, and shrimp powder if using, then simmer until the liquid reduces and the chicken is tender.
Heat a grill pan and lightly oil it, then grill the chicken while basting occasionally with the remaining sauce.
Serve with warm rice, chili sauce, and fresh vegetables.
