Indonesian Fried Chicken with Herbs
Ingredients
- 500g chicken pieces
- 1/2 lime (to rub on chicken after cleaning)
- 1 tsp salt (to rub on chicken after cleaning)
- 1 stalk curry leaves
- 4 pandan leaves, cut into 2 or 3 pieces
- 1 tsp salt
- 1/2 tsp sugar
- 2 tbsp palm sugar
- 2 tbsp water
- 1 tsp tamarind paste
- 1 tbsp oil (for sautéing)
- As needed oil for frying
Ground spices
- 6 shallots
- 4 garlic cloves
- 1 tsp coriander seeds
- 1/2 tsp black pepper
Preparation
Clean the chicken and rub with lime juice and salt.
Grind the spices.
Prepare a pan, add oil, then add the ground spices, salt, sugar, tamarind paste, and palm sugar mixture (mix palm sugar with water and stir well).
Add the chicken, stir well, and cook until the spices are dry.
After the spices are dry, turn off the heat.
Prepare another pan, add oil, and fry the chicken until golden brown and cooked through, then turn off the heat.
Fry the pandan leaves and curry leaves.
Prepare a plate, arrange the chicken, and place the fried pandan and curry leaves on top.
The dish is ready to serve.
