Spicy Sambal with Chicken Giblets
Ingredients
- 500g chicken giblets
- Lime (for cleaning)
- 1 teaspoon turmeric powder (or fresh turmeric)
- 1 teaspoon garlic powder (or fresh garlic)
- 1 teaspoon coriander powder (or fresh coriander)
- 1 teaspoon salt (for boiling)
- 1 tablespoon margarine
- Oil from frying giblets
- A little water
- Sugar
- Salt (to taste)
- 5 shallots, sliced
Coarse spice mix
- Handful of bird's eye chilies
- 3 cloves garlic
- 1 tomato, diced
Preparation
Clean the chicken giblets, squeeze lime over them, and wash again
Boil the giblets with 1 teaspoon turmeric powder, 1 teaspoon garlic powder, 1 teaspoon coriander powder, and 1 teaspoon salt until cooked
Fry the boiled giblets until golden brown and set aside
Heat oil and margarine in a pan
Add sliced shallots and cook until fragrant
Add the coarse spice mix and cook until the tomato softens
Mix in the fried chicken giblets
Add sugar and salt, stir until well combined
Taste and adjust seasoning, then turn off the heat
Tips
If powder ingredients are unavailable, use fresh versions instead
