Smashed Fried Chicken with Spicy Sambal
Ingredients
Marinade
- 3 grated garlic cloves
- 1/2 teaspoon black pepper powder
- chicken stock powder
- 1 egg
Flour mixture
- 300 grams all-purpose flour
- 60 grams cornstarch
- 1 teaspoon black pepper powder
- salt
- chicken stock powder
Sambal
- red bird's eye chilies
- green bird's eye chilies
- garlic
- salt
- sugar
- 1 lime
Preparation
Mix the marinade ingredients and coat the chicken, then refrigerate for 30 minutes.
Combine all the flour mixture ingredients.
Remove the chicken from the refrigerator, coat it in the flour mixture by massaging and tapping, then fry in plenty of hot oil until cooked.
Briefly boil the chilies for the sambal, then drain and let them dry.
Pound the chilies with garlic, salt, and sugar.
Add the juice of one lime to the sambal mixture.
Pour hot oil from frying the chicken over the sambal and stir well.
Take the fried chicken and smash it onto the sambal to serve.
Tips
To reduce spiciness, briefly boil the chilies until the water boils, then drain immediately.
