Fried Cassava with Spices
Ingredients
- 1 kg cassava
Spice mix
- 3 cloves garlic
- 2 tablespoons salt
- 1 teaspoon pepper
- 1/2 teaspoon mushroom stock
- 1/2 teaspoon sugar
Preparation
Peel, clean, and cut the cassava into pieces, then score it lengthwise.
Grind the spice mix ingredients into a fine paste.
Boil the scored cassava with the spice paste until sufficiently cooked but not mushy to prevent it from falling apart.
Prepare a container with a little water, add the boiled cassava, and submerge it with ice cubes. Let it sit for about 1 hour or store in the fridge overnight before frying.
Drain the cassava and fry it in hot oil until golden brown. Serve for breakfast.
Tips
This dish pairs well with Madurese petis sauce for enhanced flavor.
The process takes time but is easy to prepare, making it a healthy snack option.
