Bangka Style Fish Head and Pineapple Curry
Ingredients
- 1 whole fish head (any fish)
- 1/4 pineapple (adjust based on size)
- Smashed galangal, as needed
- Salt, as needed
- Sugar, as needed
- Tamarind water, as needed
- Key lime juice for marinating
- Adequate clean water
Ground spices
- 6 red chilies (add bird's eye chilies for extra spice if desired)
- Thumb-sized turmeric
- 1 teaspoon Bangka shrimp paste
- 6 shallots
- 3 cloves garlic
Preparation
Clean the fish and squeeze key lime juice over it, then set aside.
Heat water in a pan, add the ground spices, and let it boil.
Add the fish head and pineapple, cook until the fish is done, then add sugar, salt, and tamarind water.
Wait for it to boil, then taste and adjust seasoning as desired.
Tips
For a more acidic flavor, add extra tamarind water.
