Shrimp with Fermented Beans and Green Chilies

Ingredients

  • 250 grams peeled shrimp
  • 200 grams fermented soybeans (taoco, washed)
  • As needed curly green chilies, cut diagonally
  • A piece of ginger, cut into matchsticks
  • 4 shallots, sliced
  • 2 garlic cloves, sliced
  • A pinch of salt
  • A bit of sugar
  • Stock powder to taste
  • 1/2 teaspoon soy sauce
  • As needed water
  • Optional bird's eye chilies

Preparation

  1. Blanch the green chilies briefly in boiling water, then drain and set aside to reduce spiciness.

  2. Heat a little oil in a pan.

  3. Sauté the sliced shallots, garlic, and ginger until fragrant.

  4. Add the shrimp and stir-fry briefly.

  5. Add the fermented soybeans and pour in some water; let it come to a boil.

  6. Add the prepared green chilies, sugar, salt, stock powder, and soy sauce; stir well.

  7. Let it cook for a short while, then taste and adjust seasoning.

  8. Serve immediately.
