Indonesian Squid and Petai Stir-Fry
Ingredients
- 300g fresh squid, cleaned and marinated with lime juice
- 1 bunch petai beans, peeled
- Sliced large green chili and red bird's eye chili
- 1 sliced tomato
- 1 tablespoon sweet soy sauce
- 1 bruised lemongrass stalk
- 2 kaffir lime leaves
- 2 bay leaves
- Salt, mushroom stock powder, pepper, and a little sugar
Ground spices
- 5 shallots
- 4 garlic cloves
- 1/2 teaspoon ground coriander
- A little ginger and turmeric
Preparation
Sauté the ground spices, lemongrass, bay leaves, and kaffir lime leaves until fragrant and fully cooked.
Add the squid, stir until firm, then add sweet soy sauce, salt, mushroom stock powder, pepper, and a little sugar; cook quickly on high heat.
Finally, add the petai beans, chilies, and tomato, stir well, cook briefly, then remove from heat and serve.
