Indonesian Spiced Shredded Mackerel
Ingredients
- 500 g mackerel
- 1 bunch basil
- 1 smashed lemongrass stalk
- 1 smashed galangal piece
- 2 bay leaves
- 2 kaffir lime leaves
- Salt to taste
Ground spices
- Chilies to taste (red and bird's eye)
- 1/2 inch ginger
- 3 cloves garlic
- 6 shallots
- 1/2 inch turmeric
Preparation
Wash the fish thoroughly.
Rub with salt and lime juice, let sit for 10 minutes.
Wash again, then steam with lemongrass in the water to reduce fishy smell.
After steaming, cool and shred the fish.
Sauté the ground spices and other spices except basil until cooked and fragrant.
Add the shredded fish, season with salt and sugar to taste, adjust seasoning.
Finally, add basil and stir well.
Serve with warm rice.
Tips
Adding lemongrass to the steaming water helps reduce the fishy odor.
This dish is very flavorful and pairs well with rice, potentially encouraging multiple servings.
