Spicy Indonesian Mackerel Tuna
Ingredients
- 1/2 kg mackerel tuna (3-4 pieces)
- 7 shallots (sliced thinly)
- 4 garlic cloves (sliced thinly)
- 1 tablespoon sugar
- 1 teaspoon chicken bouillon or mushroom bouillon
- 1 teaspoon salt
- 2 tablespoons oil for sautéing
- 100 ml water
Ground spices
- 5 medium tomatoes
- 13 large red chilies
- 5 bird's eye chilies (to taste)
- 1 teaspoon shrimp paste
Preparation
Clean the mackerel tuna by removing internal dirt, wash it clean, then fry the fish without over-drying, let it cool, and separate from bones and head.
Heat a pan, add oil, and sauté shallots then garlic until aromatic.
Add the ground spices, sauté over medium heat until the sauce changes color and water content reduces.
Add water, salt, sugar, chicken or mushroom bouillon, taste and adjust seasoning, let it boil.
Add the fried mackerel tuna, wait until the spices absorb into the fish.
Remove from heat and serve.
Tips
If using fresh mackerel tuna, clean and rinse the fish, for 1 kg season with 3 garlic cloves, 3 cm turmeric, and 1 tablespoon salt, then steam for 15-20 minutes.
