Spicy Stir-Fried Gurame Fish
Ingredients
- 2 whole gurame fish
- 1 lime
- 1 teaspoon salt
- 1 stalk lemongrass
- 2 bay leaves
- 7 whole shallots
- 7 bird's eye chilies
- 1 carrot
- 1 cucumber
- Water, as needed
- 1 tablespoon vinegar
- Sugar, salt, and pepper, as needed
- Stock powder, as needed
Spice mixture
- 7 shallots
- 3 cloves garlic
- 3 cm turmeric root
- 1 cm ginger
- 2 turmeric roots
Preparation
Clean the fish, rub with lime juice and salt, let marinate for 15 minutes. After 15 minutes, fry the fish until cooked.
Grind the spice mixture ingredients, stir-fry with bay leaves and lemongrass, add carrot and chilies, stir well, then add water and fried gurame fish.
Add sugar, salt, pepper, and vinegar, add cucumber, cook until the water reduces, add stock powder. Adjust seasoning and serve.
