Spicy Indonesian Mackerel Dish
Ingredients
- 5 small mackerel fish
- 1 stalk lemongrass, bruised
- 1 bay leaf
- 3 kaffir lime leaves
- 1 lime
- Bird's eye chilies whole, as needed
- 1 tomato
- Salt, to taste
- Sugar, to taste
- Stock powder, to taste
- Water, as needed
- Oil for sautéing
Spice paste
- 8 shallots
- 5 garlic cloves
- 3 curly red chilies
- 5 candlenuts
- 1 thumb-sized ginger
- 1 thumb-sized galangal
- 2 thumb-sized turmeric roots
Preparation
Wash the fish clean, make slits on the body, marinate with lime juice and salt for 30 minutes, fry and set aside.
Heat oil, sauté the spice paste and bay leaf, lemongrass, kaffir lime leaves until fragrant and cooked.
Add water, salt, pepper, stock powder, and whole bird's eye chilies, let it boil.
Add the fish, cook until spices absorb, taste test. Finally, add tomato, cook briefly, remove from heat and serve.
