Spicy Balado Beef and Potatoes

Ingredients

Main

  • 500g beef, cut to preference, pre-cooked with 3 garlic cloves, 1-inch piece of ginger, 2 bay leaves, 2 lemongrass stalks bruised, 4 kaffir lime leaves, salt, and sugar
  • 250g potatoes

Balado sauce

  • 7 shallots
  • 5 garlic cloves
  • 100g large red chilies
  • 10 red curly chilies
  • Bird's eye chilies, to taste
  • 1/2 tomato
  • 1-inch piece of ginger, bruised
  • 1-inch piece of galangal, bruised
  • 2 kaffir lime leaves
  • 1 bay leaf
  • 1 lemongrass stalk, bruised
  • Salt and sugar, to taste
  • Oil, as needed

Preparation

  1. Coarsely crush or blend shallots, garlic, and chilies.

  2. Heat 5 tablespoons of oil, sauté all the balado ingredients, add sugar and salt, cook until done, and adjust taste.

  3. Fry the pre-cooked beef and potatoes until dry, then add them to the balado sauce, mix well, and serve.
