Spicy Balado Beef and Potatoes

- 500g beef, cut to preference, pre-cooked with 3 garlic cloves, 1-inch piece of ginger, 2 bay leaves, 2 lemongrass stalks bruised, 4 kaffir lime leaves, salt, and sugar
- 250g potatoes
Balado sauce
- 7 shallots
- 5 garlic cloves
- 100g large red chilies
- 10 red curly chilies
- Bird's eye chilies, to taste
- 1/2 tomato
- 1-inch piece of ginger, bruised
- 1-inch piece of galangal, bruised
- 2 kaffir lime leaves
- 1 bay leaf
- 1 lemongrass stalk, bruised
- Salt and sugar, to taste
- Oil, as needed
Preparation
Coarsely crush or blend shallots, garlic, and chilies.
Heat 5 tablespoons of oil, sauté all the balado ingredients, add sugar and salt, cook until done, and adjust taste.
Fry the pre-cooked beef and potatoes until dry, then add them to the balado sauce, mix well, and serve.
