Indonesian Shrimp and Vegetable Sambal

Ingredients

  • 250g peeled shrimp
  • 100g green beans
  • 2 tomatoes, quartered
  • 2 packs petai beans, peeled
  • Salt to taste
  • Sugar to taste
  • Mushroom seasoning to taste
  • Tamarind water: 1 tablespoon tamarind paste soaked in 100ml water and strained
  • Oil for sautéing

Spices

  • 8 shallots
  • 2 cloves garlic
  • 3 candlenuts
  • 1 teaspoon shrimp paste
  • 10 curly red chilies
  • 5 bird's eye chilies

Preparation

  1. Heat oil and sauté the ground spices until fragrant, add shrimp and sauté briefly, then add green beans and petai, and stir-fry until evenly mixed.

  2. Add salt, sugar, mushroom seasoning, and tamarind water, taste and adjust to be sour, sweet, and spicy, then add tomato, stir-fry briefly, remove from heat and serve.
