Indonesian Shrimp and Vegetable Sambal
Ingredients
- 250g peeled shrimp
- 100g green beans
- 2 tomatoes, quartered
- 2 packs petai beans, peeled
- Salt to taste
- Sugar to taste
- Mushroom seasoning to taste
- Tamarind water: 1 tablespoon tamarind paste soaked in 100ml water and strained
- Oil for sautéing
Spices
- 8 shallots
- 2 cloves garlic
- 3 candlenuts
- 1 teaspoon shrimp paste
- 10 curly red chilies
- 5 bird's eye chilies
Preparation
Heat oil and sauté the ground spices until fragrant, add shrimp and sauté briefly, then add green beans and petai, and stir-fry until evenly mixed.
Add salt, sugar, mushroom seasoning, and tamarind water, taste and adjust to be sour, sweet, and spicy, then add tomato, stir-fry briefly, remove from heat and serve.
