Stir-Fried Tapioca Leaves with Shrimp Paste

Ingredients

  • 2 bundles tapioca leaves
  • 3 shallots
  • 3 garlic cloves
  • 4 red chilies, adjust to taste
  • Shrimp paste, to taste
  • Salt and seasoning, to taste
  • Oil for stir-frying

Preparation

  1. Clean the tapioca leaves and wash thoroughly.

  2. Grind the shallots, garlic, chilies, and shrimp paste.

  3. Stir-fry the ground spices until fragrant.

  4. Add the tapioca leaves and stir.

  5. Add salt and seasoning.

  6. Add water little by little as needed.

  7. Stir until the vegetables wilt slightly.

  8. Taste and adjust seasoning.

  9. Remove from heat and serve.
