Indonesian Fried Rice Noodles

Ingredients

  • 1 package corn rice vermicelli
  • 1 egg
  • 10 meatballs, sliced
  • 1 bunch mustard greens, chopped
  • 1 carrot, chopped
  • 1 stalk green onion, sliced
  • 2 stalks celery, sliced
  • 4 shallots, sliced
  • 4 garlic cloves, sliced
  • 1 teaspoon chili powder, or to taste
  • 1 teaspoon oyster sauce
  • 1 teaspoon sweet soy sauce
  • 1/2 teaspoon pepper powder
  • Salt to taste
  • Oil for sautéing, as needed

Preparation

  1. Soak the corn rice vermicelli in warm water and drain before starting.

  2. Heat oil in a pan, add the beaten egg and stir-fry until scrambled, then set aside. Sauté the sliced shallots and garlic until fragrant. Add the sliced meatballs and chopped carrot, stir in the egg, and cook until the carrot softens.

  3. Add the drained vermicelli, chili powder, oyster sauce, sweet soy sauce, pepper, and salt. Stir well and cook on medium heat until evenly mixed.

  4. When the vermicelli is half-cooked, add the chopped mustard greens, sliced green onion, and sliced celery. Stir and cook until everything is done, then taste and adjust seasoning.

  5. Remove from heat, sprinkle with fried shallots, and serve.
