Cellophane Noodles with Spicy Green Chili

Ingredients

  • 1 bundle of traditional cellophane noodles
  • 2 stalks of wood ear mushrooms
  • 7 green chilies
  • 3 tablespoons sweet soy sauce
  • 1 tablespoon oyster sauce
  • 5 shallots
  • 3 cloves garlic
  • 2 roasted candlenuts
  • Ground pepper
  • Sugar
  • Salt
  • Stock powder

Preparation

  1. Prepare the cellophane noodles by boiling briefly, draining, rinsing with cold water, and draining again

  2. Heat oil in a pan, then add sliced shallots, ground spices, green chilies, and wood ear mushrooms

  3. Add water as needed, then stir in sweet soy sauce, oyster sauce, sugar, salt, ground pepper, and stock powder

  4. Add the prepared cellophane noodles and cook until the water reduces

  5. Serve

Tips

  1. Choose authentic Solo cellophane noodles tied with bamboo string for better texture and to avoid musty smells

  2. Wash the noodles after boiling to remove any unwanted odors
