Fried Rice with Shrimp Paste and Petai

Ingredients

  • 2 servings white rice
  • 1 bunch petai beans
  • 1 egg
  • 2 tablespoons sweet soy sauce
  • 1 tablespoon tomato sauce
  • 1 tablespoon chili sauce
  • salt to taste
  • stock powder to taste
  • oil for sautéing

Ground spices

  • 5 shallots
  • 4 cloves garlic
  • 2 large curly chilies
  • 6 bird's eye chilies
  • 1/2 tablespoon dried shrimp
  • 1/4 teaspoon grilled shrimp paste

Preparation

  1. Heat oil, fry the egg and scramble it, then stir-fry with the ground spices until fragrant.

  2. Add white rice, sweet soy sauce, tomato sauce, chili sauce, salt, and stock powder, and mix evenly.

  3. Taste and adjust seasoning, then add the petai beans and cook briefly before turning off the heat.

  4. Serve with accompaniments such as pickles, crackers, and a fried egg.

Notes

  1. Petai adds a unique aroma and flavor to the dish, but it has a strong smell that may linger.
