Indonesian Stuffed Squid with Sauce
Ingredients
Filling
- 2 pieces white tofu
- 1 egg
- 1 tablespoon wheat flour
- Sliced green onions
- 1/2 teaspoon salt
Sauce
- 4 shallots
- 3 cloves garlic
- 2 candlenuts
- 1 piece ginger
- 1 piece turmeric
- 1/2 teaspoon coriander
- 5 curly red chilies
- 1 piece galangal, smashed
- 1 stalk lemongrass, smashed
- 2 kaffir lime leaves
- 1 bay leaf
- 1/2 teaspoon cumin powder
- Salt and sugar to taste
- 1 packet instant coconut milk
Preparation
Mash the tofu and mix it with all the filling ingredients. Stuff the squid and secure with a toothpick.
Grind the onions, coriander, candlenuts, ginger, and chilies. Sauté with the other spices. Add water and the stuffed squid. Once it boils, add the coconut milk. Cook until the squid is tender.
