Indonesian Clear Beef Soup

Ingredients

  • 250 grams Beef
  • Bean sprouts, as needed
  • Cabbage, thinly sliced, as needed
  • 2 stalks Green onions, thinly sliced
  • 1 bay leaf
  • 2 kaffir lime leaves
  • 1 stalk Lemongrass, bruised
  • 1 piece Galangal, bruised
  • Salt, to taste
  • Sugar, to taste
  • Water, as needed

Spice paste

  • 6 shallots
  • 4 cloves garlic
  • 1/2 teaspoon pepper

Preparation

  1. Boil the bean sprouts and cabbage separately, then drain.

  2. Wash the beef thoroughly, boil it in water until foamy, discard the water, replace with fresh water, and simmer on low heat.

  3. Sauté the spice paste until fragrant, then add it to the beef broth along with galangal, lemongrass, bay leaf, and kaffir lime leaves.

  4. Add salt and sugar, cook until the beef is tender, adjust the seasoning, and drain the beef.

  5. Remove the beef and cut it into desired pieces.

  6. Arrange the bean sprouts, cabbage, and green onions in a bowl, add the beef pieces, pour over the beef broth, sprinkle with fried shallots, and serve.
