Spicy Banana Blossom in Coconut Sauce
Ingredients
- 1 banana blossom
Spices
- 3 cloves garlic
- 5 shallots
- 7 bird's eye chilies
- 2 candlenuts
- 1/2 packet shrimp paste
- A little lesser galangal
- Salt to taste
- Sugar to taste
- Seasoning to taste
- Coconut milk as needed (not too thin or thick)
Preparation
Clean the banana blossom, remove the hard petals, slice diagonally, massage with salt, wash under running water, boil until tender, drain, and place in a mortar.
Grind all the spices together.
Mix the ground spices with coconut milk and boil until the coconut milk thickens slightly, then adjust seasoning and remove from heat.
Pour the coconut milk mixture into the mortar with the banana blossom little by little, while gently pounding or mixing to combine evenly.
Serve with warm rice.
