Salted Squid with Sambal Matah

Ingredients

  • 250g salted squid
  • 2 stalks lemongrass
  • 1 kecombrang (optional)
  • 12 shallots
  • 15 red bird's eye chilies
  • 6 kaffir lime leaves
  • Juice of 2 limes
  • Salt to taste
  • Sugar to taste
  • Hot oil as needed

Preparation

  1. Wash the squid clean and soak the salted squid in hot water for 15 minutes, then wash again

  2. Boil the squid for 3 minutes, remove and drain, cut into small pieces and arrange on a plate

  3. Prepare a bowl, add lemongrass, kaffir lime leaves, shallots, and bird's eye chilies, then add salt and sugar to taste, pour in hot oil as needed, mix well, finally add lime juice and adjust taste

  4. Pour the mixture over the squid pieces and enjoy
