Indonesian Cucumber Acar

Ingredients

  • 3 cucumbers
  • 3 shallots
  • 3 red chilies
  • 2 green chilies
  • 3 tablespoons sugar
  • 1/2 teaspoon salt
  • A little lime juice

Preparation

  1. Peel the cucumbers, score them with a fork from top to bottom, and slice them thinly on a diagonal. Set aside.

  2. Slice the shallots into small pieces.

  3. Slice the red chilies into rounds.

  4. Slice the green chilies into rounds.

  5. Mix all the ingredients together in a bowl until well combined.

  6. Add the lime juice and stir.

  7. Place the mixture in the refrigerator until it releases its own liquid, without adding water.

  8. Serve cold for better taste and freshness.

Tips

  1. This dish is best enjoyed with kebuli rice or yellow rice.
