Indonesian Vegetable Dish with Grated Coconut
Ingredients
- 1/2 young coconut, grated
- 1 bunch long beans, chopped small
- 1 pack short bean sprouts
- 3 large cucumbers, chopped small
- 2 bunches basil
- as needed Chinese petai (optional)
Spice mix
- 5 cloves garlic
- 6 curly chilies
- 5 bird's eye chilies
- 3 thumbs kencur
- 5 lime leaves
- 3 tablespoons sugar (to taste)
- 1.5 teaspoons salt (adjust)
- seasoning as needed
Preparation
Mix the spice mixture with the grated coconut until evenly coated.
Taste and adjust the seasoning; prefer a sweet and savory flavor.
Roast the coconut mixture in a non-stick pan.
Combine the roasted coconut with the chopped vegetables in a bowl.
Notes
Adjust sugar and salt according to personal taste.
Chinese petai can be omitted if not available.
