Spicy Salted Squid Stir-Fry
Ingredients
- 250g salted squid
- 1 stalk lemongrass
- 1 bay leaf
- A handful of green bird's eye chilies
- 1 red chili
- Salt
- Sugar
- Stock powder or seasoning
Ground spices
- 10 red chilies
- 5 red bird's eye chilies
- 6 red onions
- 3 garlic cloves
Preparation
Soak the squid in hot water to reduce saltiness, wash it clean, fry briefly, and drain.
Sauté the ground spices until fragrant, then add lemongrass, bay leaf, green bird's eye chilies, sliced red chili, and a little water.
Add the squid, a little salt, sugar, and stock powder, stir until the water reduces.
Taste and adjust seasoning, then remove from heat.

This spicy dish pairs well with rice and is very flavorful.
