Spicy Indonesian Anchovy Stir-Fry

Ingredients

  • 1/4 portion larger anchovies (not Medan type)

Spices

  • 3 red shallots
  • 2 garlic cloves
  • 2 curly red chilies
  • 2 red chilies
  • a little tamarind juice
  • salt
  • granulated sugar

Preparation

  1. Wash the anchovies clean

  2. Directly mix with spices in a bowl

  3. Prepare a little oil

  4. Put in anchovies and spices as if stir-frying but do not stir too often because they will break

  5. Add a little oil if anchovies are still wet

  6. Cook until dry and spices are absorbed

Tips

  1. Do not fry the anchovies first; mix them raw with the spice paste before stir-frying until crispy

  2. Serve with warm rice for a complete meal
