Spicy Indonesian Anchovy Stir-Fry
Ingredients
- 1/4 portion larger anchovies (not Medan type)
Spices
- 3 red shallots
- 2 garlic cloves
- 2 curly red chilies
- 2 red chilies
- a little tamarind juice
- salt
- granulated sugar
Preparation
Wash the anchovies clean
Directly mix with spices in a bowl
Prepare a little oil
Put in anchovies and spices as if stir-frying but do not stir too often because they will break
Add a little oil if anchovies are still wet
Cook until dry and spices are absorbed
Tips
Do not fry the anchovies first; mix them raw with the spice paste before stir-frying until crispy
Serve with warm rice for a complete meal
