Baked Rice with Salted Squid

Ingredients

  • 3 portions white rice
  • 6 banana leaves

Salted squid stir-fry

  • 300g salted squid
  • 2 bay leaves
  • 1 piece galangal, smashed
  • 1 lemongrass, smashed
  • 2 tablespoons oyster sauce
  • 1 tablespoon sweet soy sauce
  • A little water
  • Salt
  • Sugar

Sliced spices

  • 12 shallots
  • 6 garlic cloves
  • 15 green chilies
  • 10 whole bird's eye chilies

Preparation

  1. Wash salted squid cleanly then soak in hot water for 10 minutes, then wash again and cut

  2. Fry squid briefly then lift and drain

  3. Sauté shallots and garlic until fragrant then add other ingredients, sauté until cooked

  4. Add oyster sauce and a little water, salt and sugar, check taste

  5. Add salted squid and sweet soy sauce, stir well

  6. Add whole bird's eye chilies, stir until spices absorb

Assembly and baking

  1. Prepare banana leaves, trim edges then clean with cloth

  2. Heat banana leaves over stove flame briefly until surface is flexible

  3. Place rice on banana leaf then add 2-3 tablespoons squid stir-fry on white rice

  4. Roll slowly and pack the right and left ends with a spoon

  5. Twist the remaining leaf and tuck in or skewer with toothpick

  6. Grill rice on teflon until banana leaf is brownish
