Indonesian Stir-Fried Papaya Leaves
Ingredients
- 1 large bunch papaya leaves
- 1 handful anchovies
Chopped spices
- 3 cloves garlic
- 8 shallots
- 2 large red chilies
- 10 bird's eye chilies
Additional seasonings
- 2 cm galangal (smashed)
- 2 bay leaves
- 1 tablespoon oyster sauce
- 2 tablespoons sweet soy sauce (to taste)
- Sugar (to taste)
- Salt (to taste)
- Pepper (to taste)
- Stock powder (to taste)
Preparation
Boil the papaya leaves with 50ml tamarind water until tender, then wash, squeeze out excess water, chop, and set aside.
Fry the anchovies until dry and set aside.
Sauté the chopped spices with smashed galangal and bay leaves until fragrant, then add water as needed.
Add the prepared papaya leaves, season with sugar, salt, pepper, stock powder, oyster sauce, and sweet soy sauce to taste, and mix well.
Cook on low heat until the flavors are absorbed, adjust the seasoning, then add the fried anchovies and stir briefly.
Remove from heat and serve.
