Pan-Fried Loaded Chicken and Chips
Ingredients
- 700-800g cooked chicken, cubed
- 1 kilo cooked chips
- 1 tbsp oil
- 1 onion sliced
- 1/3 tsp salt
- 2-3 tbsp sriracha
- 2-3 tbsp barbecue sauce
- 2-3 tbsp ketchup
- 1 bell pepper sliced
- 3-4 tbsp jalapenos
Cheese sauce
- 1.5 tbsp butter
- 1.5 tbsp plain flour
- milk as needed
- 150g mature cheddar
Preparation
Add 1 tablespoon oil to a large pan, add the sliced onion and fry until brown. Then add salt, the cooked chicken and the cooked chips, and fry for a few minutes.
Add in the sauces, sliced bell pepper and jalapenos, and fry for a couple more minutes.
Make the cheese sauce by melting butter, adding flour to create a roux, then slowly adding milk while mixing well until a pourable consistency is achieved. Add in the cheese and allow it to melt.
Arrange the chicken and chips in a wide shallow dish, pour the cheese sauce over the top, and grill for a few minutes until the sauce is golden. Garnish with coriander or parsley.
Tips
This dish is great for sharing and can be enjoyed as a main with sides like garlic bread, salad, or coleslaw, or as part of a buffet for iftar.
