Pan Fried Loaded Chicken and Chips

Ingredients

  • 700-800g cooked chicken, cubed
  • 1 kilo cooked chips
  • 1 tbsp oil
  • 1 onion sliced
  • 1/3 tsp salt
  • 2-3 tbsp sriracha
  • 2-3 tbsp barbecue sauce
  • 2-3 tbsp ketchup
  • 1 bell pepper sliced
  • 3-4 tbsp jalapenos

Cheese sauce

  • 1.5 tbsp butter
  • 1.5 tbsp plain flour
  • milk as needed
  • 150g mature cheddar

Preparation

  1. Add 1 tablespoon oil to a large pan, add the sliced onion and fry until brown. Then add salt, the cooked chicken and the cooked chips. Fry for a few minutes.

  2. Add in the sauces, use whatever you have at home. Add in the sliced bell pepper and jalapenos and fry for a couple more minutes.

  3. Make the cheese sauce: Melt butter, add flour and create a roux. Add milk slowly, mix well before adding more, until you have a pourable consistency. Add in the cheese and allow to melt.

  4. Arrange the chicken and chips in a wide shallow dish, pour the cheese sauce over the top and grill for a few minutes until the sauce is golden. Garnish with coriander or parsley.

Tips

  1. This dish is perfect for sharing and can be enjoyed as a main with sides like garlic bread, salad, or coleslaw, or as part of a buffet.

  2. Use any sauces you have at home, especially those not preferred for dipping, to incorporate them into the recipe.

  3. For the cheese sauce, adjust the milk amount to achieve the desired consistency, as it may vary based on preference.
