Classic Indian Butter Chicken

Ingredients

  • 200 g chicken breasts, thinly sliced
  • Salt to taste
  • 2 tsp ginger garlic paste
  • 1.5 tsp red chilli powder
  • 2 tsp oil
  • 1 onion, chopped
  • 3 tomatoes, chopped
  • 10-12 cashews
  • 0.5 tsp garam masala
  • 2 tbsp butter
  • 2 dry red chillies
  • 1 tsp kasuri methi
  • Cooking cream for plating
  • Coriander leaves for plating

Preparation

  1. Marinate the chicken by adding salt, 0.5 tsp ginger garlic paste, and 0.5 tsp red chilli powder, then mix well and set aside for 15-30 minutes

  2. Heat 2 tsp oil in a pan over medium heat and cook the marinated chicken for 5 minutes, then remove and set aside

  3. In the same pan, add 1 tsp ginger garlic paste, chopped onion, salt, chopped tomatoes, cashews, 0.5 tsp garam masala, 0.5 tsp red chilli powder, and 2 dry red chillies, mix well, cover, and cook for 15 minutes until tomatoes soften

  4. Allow the mixture to cool slightly, then blend it in a mixer to a smooth gravy

  5. In the same pan, add 2 tbsp butter, 0.5 tsp ginger garlic paste, and 0.5 tsp red chilli powder, then strain the blended gravy into the pan and add some water to adjust consistency

  6. Add the cooked chicken back to the pan and heat through until everything is well combined

  7. Serve the dish with cooking cream and coriander leaves for plating

Tips

  1. Thinly sliced chicken breasts will cook faster
