Mashed Potatoes with Chicken
Ingredients
Mashed potatoes
- 3 medium potatoes
- 2 cloves garlic
- 2 tablespoons butter
- 1/2 cup milk
- 1 teaspoon salt
- a pinch of nutmeg
Chicken
- 2 tablespoons olive oil
- 4 boneless chicken thighs
- 1 medium onion, chopped
- 2 cloves garlic, crushed
- 2 tablespoons starch
- 1 cup chicken broth
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 200 grams sliced mushrooms
Garnish
- parsley
- parmesan cheese
Preparation
Peel the potatoes, cut them into 1-inch cubes, place in a pot, cover with water, add a little salt and garlic, boil, and then drain.
In the same pot, add butter, salt, and nutmeg, mash well with a fork or masher, gradually adding milk to achieve the desired consistency, and keep warm.
In a skillet, heat the oil, add the chicken, sprinkle with some salt and pepper, and sauté, stirring occasionally, until golden brown.
Add the onion and garlic, and stir until wilted and golden.
Add the mushrooms and stir until wilted.
Sprinkle the starch over the chicken, add the broth or water, and stir to mix.
Cover the skillet and simmer on low heat for 15 minutes until the chicken is cooked and the sauce thickens.
Place the mashed potatoes on a serving dish and make a well in them.
Add the chicken mixture, sprinkle with parsley and cheese, and serve.
