Pan Fried Loaded Chicken & Chips

Ingredients

  • 700 - 800g cooked chicken, cubed
  • 1 kilo cooked chips (airfried or cooked)
  • 1 tbsp oil
  • 1 onion, sliced
  • 1/3 tsp salt
  • 2 - 3 tbsp sriracha
  • 2 - 3 tbsp barbecue sauce
  • 2 - 3 tbsp ketchup
  • 1 bell pepper, sliced
  • 3 - 4 tbsp jalapenos
  • 1.5 tbsp butter
  • 1.5 tbsp plain flour
  • Milk (as needed)
  • 150g mature cheddar

Preparation

  1. Heat 1 tbsp oil in a large pan. Add sliced onion and fry until brown. Then add salt, cooked chicken, and cooked chips. Fry for a few minutes.

  2. Incorporate the sauces (sriracha, barbecue sauce, ketchup). Add the sliced bell pepper and jalapenos. Fry for a couple more minutes.

  3. Make the cheese sauce: Melt butter, add flour to create a roux. Slowly add milk, ensuring smooth mixing before adding more. Add cheese and melt.

  4. Arrange chicken and chips in a wide shallow dish. Pour the cheese sauce over the top and grill for a few minutes until the sauce is golden. Garnish with coriander or parsley. Ready to enjoy!
