Simple Chicken Pie from Blender
Ingredients
- 2 cups milk
- 1 cup oil
- 3 eggs
- 1 chicken bouillon cube
- Salt to taste
- 3 cups wheat flour
- 1 tablespoon baking powder
- Margarine and flour for greasing
Filling
- 4 tablespoons olive oil
- 1 chopped onion
- 1 chopped tomato
- 2 tablespoons tomato paste
- 1/2 can drained corn
- 3 cups cooked shredded chicken
- 1/2 cup chopped green herbs
- Salt and black pepper to taste
Preparation
For the filling, heat the olive oil in a pan over medium heat and sautΓ© the onion and garlic for 3 minutes.
Add the tomato, tomato paste, peas, and corn, and sautΓ© for another 3 minutes.
Add the chicken, green herbs, salt, and pepper, and sautΓ© for another 5 minutes.
Turn off the heat, mix in the cream cheese, and let it cool.
In a blender, blend the milk, oil, eggs, and salt.
Transfer the mixture to a bowl, add the flour and baking powder, and mix with a spoon.
Pour half of the batter into a greased and floured 30cm x 22cm baking pan, spread the filling on top, and cover with the remaining batter.
Sprinkle with grated cheese and bake in a preheated medium oven for 40 minutes or until golden brown.
Let it cool slightly, cut into squares, and serve.
