Simple Chicken Pie from Blender

Ingredients

  • 2 cups milk
  • 1 cup oil
  • 3 eggs
  • 1 chicken bouillon cube
  • Salt to taste
  • 3 cups wheat flour
  • 1 tablespoon baking powder
  • Margarine and flour for greasing

Filling

  • 4 tablespoons olive oil
  • 1 chopped onion
  • 1 chopped tomato
  • 2 tablespoons tomato paste
  • 1/2 can drained corn
  • 3 cups cooked shredded chicken
  • 1/2 cup chopped green herbs
  • Salt and black pepper to taste

Preparation

  1. For the filling, heat the olive oil in a pan over medium heat and sautΓ© the onion and garlic for 3 minutes.

  2. Add the tomato, tomato paste, peas, and corn, and sautΓ© for another 3 minutes.

  3. Add the chicken, green herbs, salt, and pepper, and sautΓ© for another 5 minutes.

  4. Turn off the heat, mix in the cream cheese, and let it cool.

  5. In a blender, blend the milk, oil, eggs, and salt.

  6. Transfer the mixture to a bowl, add the flour and baking powder, and mix with a spoon.

  7. Pour half of the batter into a greased and floured 30cm x 22cm baking pan, spread the filling on top, and cover with the remaining batter.

  8. Sprinkle with grated cheese and bake in a preheated medium oven for 40 minutes or until golden brown.

  9. Let it cool slightly, cut into squares, and serve.
