Caipira Style Savory Pie

Ingredients

Filling

  • 300g calabresa sausage
  • 1 medium onion
  • 2 ripe tomatoes
  • 170g can of corn
  • 170g can of peas
  • 2 tablespoons chopped olives
  • 2 tablespoons chives
  • 2 tablespoons parsley
  • Black pepper to taste
  • 1.5 teaspoons salt (8g)

Dough

  • 5 eggs
  • 1 cup oil (240ml)
  • 2 cups milk (480ml)
  • 1 teaspoon salt (5g)
  • 2 cups cornmeal (260g)
  • 1 cup wheat flour (140g)
  • 1 tablespoon baking powder (15g)
  • 50g grated cheese

Preparation

  1. Preheat the oven to 180°C for 10 minutes

  2. In a large bowl, mix all the dough and filling ingredients together until well combined

  3. Pour the mixture into a greased baking pan

  4. Bake for 50 minutes at 180°C until golden and set

Notes

  1. Use 240ml cups for all measurements

  2. Ideal pan size is 34cm length, 24cm width, and 5cm depth
