Caipira Style Savory Pie
Ingredients
Filling
- 300g calabresa sausage
- 1 medium onion
- 2 ripe tomatoes
- 170g can of corn
- 170g can of peas
- 2 tablespoons chopped olives
- 2 tablespoons chives
- 2 tablespoons parsley
- Black pepper to taste
- 1.5 teaspoons salt (8g)
Dough
- 5 eggs
- 1 cup oil (240ml)
- 2 cups milk (480ml)
- 1 teaspoon salt (5g)
- 2 cups cornmeal (260g)
- 1 cup wheat flour (140g)
- 1 tablespoon baking powder (15g)
- 50g grated cheese
Preparation
Preheat the oven to 180°C for 10 minutes
In a large bowl, mix all the dough and filling ingredients together until well combined
Pour the mixture into a greased baking pan
Bake for 50 minutes at 180°C until golden and set
Notes
Use 240ml cups for all measurements
Ideal pan size is 34cm length, 24cm width, and 5cm depth
