Brazilian Meat Stuffed Pastries

Ingredients

Dough

  • about 1 kg all-purpose flour
  • 250 ml water
  • 250 ml milk
  • 125 ml oil
  • 2 packets dry yeast
  • 2 tablespoons sugar
  • 1 teaspoon salt

Filling

  • 1 kg ground beef
  • 1 onion, finely chopped
  • salt, to taste
  • pepper, to taste
  • fresh herbs (such as parsley and scallions), to taste

For brushing

  • 1 egg yolk, beaten

Preparation

  1. Combine yeast, sugar, and salt in a bowl

  2. Add warm water, milk, and oil; mix well

  3. Gradually add flour until the dough pulls away from the hands

  4. Transfer to a floured surface and knead for 10 minutes

  5. Cover and let rise for 20 minutes

  6. While the dough rises, sautΓ© ground beef with onion, salt, pepper, and fresh herbs until well dried

  7. Preheat oven to 180Β°C (350Β°F)

  8. Shape the dough into small pastries

  9. Brush with beaten egg yolk

  10. Bake for 15 to 20 minutes, or until golden brown

Tips

  1. You may not need all the flour; add only until the dough is no longer sticky

  2. Cook the filling until very dry to prevent soggy pastries
