Hand-Stretched Leek Börek
Ingredients
Dough
- 4 cups warm water
- 5.5 cups flour
- 1 teaspoon sugar
- 1 teaspoon dry yeast
- 1 teaspoon salt
Greasing mixture
- 1 cup vegetable oil
- 100 g melted butter
Filling
- 1 kg leeks
- 0.5 cup vegetable oil
- 1 teaspoon salt
Topping
- 2 egg yolks
- 1 tablespoon milk
- Poppy seeds
Preparation
Mix all ingredients except flour and salt in a bowl, then gradually add flour and salt to form a soft dough
Divide the dough into 15-16 equal pieces
Grease each piece with the oil-butter mixture, cover, and let rest for 20 minutes
Stretch the dough thin by hand, add the filling, and roll into cylinders
Place on a greased or parchment-lined baking sheet
Brush with the egg yolk and milk mixture and sprinkle with poppy seeds
Bake in a preheated oven at 180°C for 30-35 minutes until golden
Serve warm
