Hand-Stretched Leek Börek

Ingredients

Dough

  • 4 cups warm water
  • 5.5 cups flour
  • 1 teaspoon sugar
  • 1 teaspoon dry yeast
  • 1 teaspoon salt

Greasing mixture

  • 1 cup vegetable oil
  • 100 g melted butter

Filling

  • 1 kg leeks
  • 0.5 cup vegetable oil
  • 1 teaspoon salt

Topping

  • 2 egg yolks
  • 1 tablespoon milk
  • Poppy seeds

Preparation

  1. Mix all ingredients except flour and salt in a bowl, then gradually add flour and salt to form a soft dough

  2. Divide the dough into 15-16 equal pieces

  3. Grease each piece with the oil-butter mixture, cover, and let rest for 20 minutes

  4. Stretch the dough thin by hand, add the filling, and roll into cylinders

  5. Place on a greased or parchment-lined baking sheet

  6. Brush with the egg yolk and milk mixture and sprinkle with poppy seeds

  7. Bake in a preheated oven at 180°C for 30-35 minutes until golden

  8. Serve warm
