Soft Savory Turkish Poğaça Buns

Ingredients

  • 1 cup warm water
  • 1.5 tablespoons dry yeast
  • 1.5 tablespoons sugar
  • 2 eggs (separate white for dough and yolk for topping)
  • Less than half tablespoon salt
  • 1 cup vegetable oil
  • 2 cups milk at room temperature
  • Slightly more than 8 cups flour

Filling

  • Slices of kasar cheese
  • Crushed white cheese

Topping

  • Sesame seeds
  • Egg yolks (from the eggs listed)
  • 2 teaspoons molasses

Preparation

  1. Mix warm water, sugar, and yeast, and let it sit for 10 minutes.

  2. Add the remaining ingredients in order, mix, and incorporate flour to form a soft dough that slightly sticks to hands.

  3. Let the dough rest for 30 minutes.

  4. Shape the dough into poğaça and place them on trays, then cover.

  5. Brush the first tray with a mixture of egg yolk and molasses and bake in a preheated oven at 200 degrees Celsius.

  6. Repeat the baking process with the second tray in the same way.

  7. After baking, cover the poğaça and let them sit for 5 minutes before serving for extra softness.

Tips

  1. Covering the poğaça after baking helps keep them soft and fluffy like cotton.
