Authentic Turkish Cheese Börek
Ingredients
Dough
- 500 grams flour
- 300 ml lukewarm water
- 1 teaspoon dry yeast
- 1 heaping teaspoon salt (10 grams)
Cheese filling
- about 500 grams white cheese
- finely chopped parsley
For greasing
- 150 grams butter or margarine
- 50 ml vegetable oil
Preparation
Mix all dough ingredients and knead until a soft dough forms. Add the last cup of flour gradually, adjusting for flour type. The dough should be like earlobe consistency.
Let the dough rest for 10 minutes.
Divide into 12 equal pieces, shape into balls, and let rest for 30 minutes.
Roll each ball out as thin as possible with a rolling pin and flour.
Grease with melted fat, cut into 4-finger-wide strips, stack, thin out with hands, and roll into a spiral.
Add cheese filling inside, seal, press down, and place on a baking sheet. Repeat for all pieces.
Cover and let rest for 40 minutes.
Brush with butter and bake at 200 degrees Celsius until golden brown.
