Crispy Layered Turkish Pastry

Ingredients

Dough

  • 2 cups warm milk
  • 1/2 cup vegetable oil
  • 1 packet instant yeast
  • 2 tablespoons sugar
  • 1 tablespoon salt
  • 6 to 6.5 cups flour

For greasing

  • 250 grams butter

For filling

  • string cheese
  • sausage

For topping

  • 2 egg yolks
  • poppy seeds

Preparation

  1. In a large bowl, mix the warm milk, vegetable oil, instant yeast, sugar, and salt until well combined.

  2. Gradually add the flour and knead until a soft, smooth dough forms.

  3. Cover the dough and let it rise in a warm place until doubled in size, about 1 hour.

  4. Roll out the dough and incorporate the butter by folding it in layers to create a flaky texture.

  5. Divide the dough into portions, add the filling of string cheese and sausage, and shape into buns.

  6. Place the shaped buns on a baking sheet, cover, and let them rise again for about 30 minutes.

  7. Preheat the oven to 180°C (350°F).

  8. Brush the tops with egg yolks and sprinkle with poppy seeds.

  9. Bake until golden brown and crispy, approximately 20-25 minutes.
