Turkish Buttery Pastry Rolls

Ingredients

  • 1 cup milk
  • 1 cup water
  • 1/2 cup vegetable oil
  • 2 egg whites
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 5 cups flour (add gradually)
  • 1 tablespoon dry yeast
  • 1 tablespoon soft butter

Filling

  • 200g melted butter

Topping

  • 2 egg yolks
  • Poppy seeds

Preparation

  1. Mix all ingredients except flour in a kneading bowl.

  2. Add flour gradually to form a soft dough.

  3. Cover and let the dough rest for one hour.

  4. Knead the dough for 2-3 minutes and divide it into 16 equal pieces.

  5. Roll out each piece on a floured surface to the size of a dinner plate.

  6. Stack the rolled pieces in a container, brushing butter between layers.

  7. Cover with plastic wrap and refrigerate for 20 minutes.

  8. Remove from refrigerator and shape into 3-inch wide strips.

  9. Roll the strips into rolls.

  10. Place on a greased or parchment-lined baking sheet and press down with hands.

  11. Brush with egg yolk and sprinkle with poppy seeds.

  12. Bake in a preheated 185°C fan oven for 30-35 minutes.

  13. Serve after cooling slightly.

Tips

  1. Can be made with vegetable oil or butter for different flavors.

  2. Ideal for Ramadan; prepare ahead and freeze, then thaw at room temperature or heat before consuming.
