Traditional Turkish Açma Bread Rolls
Ingredients
- 1 cup warm milk
- 1 cup vegetable oil
- 1 cup warm water
- 1 packet yeast
- 5 tablespoons sugar
- 1.5 teaspoons salt
- 1 teaspoon mahlep
- 4-5 cups flour
Topping
- 2 egg yolks
- 1 tablespoon milk
- nigella seeds
Preparation
Add all ingredients to a mixing bowl and knead, then let it rise.
Take pieces of dough the size of tangerines, place 1 teaspoon of butter on each, cover and let rest for 15 minutes.
Flatten with hands, roll into logs, and let rest for another 15 minutes.
Stretch with hands, twist left and right to shape like a simit.
Place on a baking sheet lined with parchment paper, brush with a mixture of 1 tablespoon milk and egg yolk, sprinkle with nigella seeds or sesame seeds.
Let rest on the tray for 10 minutes, then bake in a preheated oven at 200°C until golden brown.
