Flaky Turkish Açma Bread
Ingredients
- 10 cups flour
- 2 packets instant yeast
- 1.5 cups water total
- 2 cups milk
- 1 cup vegetable oil
- 4 tablespoons powdered sugar
- 3 teaspoons salt
Greasing
- 1 teacup vegetable oil
- 1 teacup butter
Filling
- 200 grams white cheese or cheddar cheese
Topping
- 2 egg yolks
- 3 tablespoons milk
Preparation
In a large bowl, mix the dry ingredients including flour, instant yeast, powdered sugar, and salt.
Add the wet ingredients such as water, milk, and vegetable oil to the dry mixture and combine to form a dough.
Knead the dough until it is smooth and elastic, then cover and let it rise in a warm place until doubled in size.
Prepare the greasing mixture and the cheese filling.
Divide the dough into portions, roll out each piece, brush with the greasing mixture, add the cheese filling, and shape into rolls or twists.
Place the shaped dough in baking trays, cover, and let it rise again until puffy.
Preheat the oven to a suitable baking temperature.
Mix the egg yolks and milk for the topping and brush it over the risen dough.
Bake in the oven until the bread is golden brown and flaky.
